Whisk milk, kefir, pumpkin, egg, oil, vinegar and vanilla extract together in a large bowl.
Whisk flours, brown sugar, baking powder, baking soda, pumpkin pie spice and salt together in a separate bowl. Add this dry mixture to the wet pumpkin mixture until combined. leave in the lumps!
Butter up a hot cast iron griddle or heat up your electric flat top to medium heat.
Spoon a pancake size amount of batter onto the griddle for each pancake and flatten slightly with the back side of the spoon. Cook until small bubble appear then flip and cook until golden brown.
Serve hot with some butter, whipped cream, a sprinkle of cinnamon sugar or maple syrup. Enjoy!
